VEGGIE RAVIOLI WITH VEGAN PESTO

This Trader Joe’s meal comes together in less than 20 minutes! Perfect for a satisfying meal that’s balanced with protein, fiber, and healthy fats.

Veggie Ravioli:

  • Trader Joe’s Sweet Corn, Burrata, & Basil Ravioli

  • 2 cups snap peas

  • 1 zucchini (chopped into half moons)

  • 1 corn cob (corn kernels removed)

Vegan Pesto:

  • 1 cup basil

  • 1/3 cup extra virgin olive oil

  • 2 tbsp. pine nuts

  • 2 tbsp. lemon juice

  • 2 cloves garlic

  • 1 tbsp. nutritional yeast

  • Salt and pepper to taste

Instructions:

  • Sauté snap peas, zucchini, and corn over medium heat for 6-8 minutes

  • Blend pesto ingredients in a nutribullet or blender

  • Cook ravioli according to package instructions

  • Combine veggies, ravioli, and pesto. Enjoy!
