FAVORITE SUMMER SALAD

Roast the chickpeas and chop up the salad ingredients at the beginning of the week. When you’re ready to eat, add the dressing and enjoy! Undressed ingredients will keep in the fridge covered for 3-4 days. Enjoy!

Salad Ingredients:

  • 4-5 Tomatoes

  • 3-4 Peaches

  • Small ball of Mozzarella

  • LOTS of Basil (2+ cups)

  • Kale Microgreens

  • Crispy chickpeas

  • Top with extra virgin olive oil, balsamic vinegar, salt, pepper, and red pepper flakes.

Crispy chickpeas:

  • Toss with extra virgin olive oil, salt, pepper, and your favorite spices (I used garlic powder and paprika)

  • Roast at 400 degrees for 25 minutes (toss halfway through roasting)

  • Remove from the baking tray and toss with Nutritional Yeast for a cheesy flavor
