PROTEIN PANCAKES

These protein pancakes with wild blueberries and date syrup are one of my favorite things to make on the weekend. Unlike regular pancakes, these will leave you feeling full and satisfied since they are high in protein. Enjoy!

Ingredients:

  • 2 cups flour (can substitute gluten-free flour)

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 2 pasture-raised eggs

  • 2 1/4 cups water

  • 2 scoops Truvani protein powder

  • 1 1/2 cups wild blueberries

  • Butter and date syrup for topping

Instructions:

  • Combine all ingredients except the butter and date syrup in a large bowl.

  • Cook pancakes in a large skillet over medium-low heat with butter. Top with date syrup.

  • Store extra pancakes in the refrigerator for up to 3 days. They keep very well and are an easy meal to prep for the week!
