TAHINI GRANOLA
This granola recipe is sweetened with dates, so it has way less sugar than what you’ll find in store-bought granolas and cereals.
It’s easy to make and uses pantry staples. You can buy the ingredients once and make this over and over again. I love this recipe because you can adjust it to your tastes and add your favorite nuts, seeds, and dried fruits.
Ingredients:
3 cups old-fashioned oats
1 cup mixture of nuts, seeds, or dried fruit (I used pumpkin seeds, flax seeds, and goji berries)
1/2 cup tahini
1/4 cup date syrup
2 tbsp vanilla extract
3 tbsp melted coconut oil
1/2 teaspoon ground cinnamon
1/3 cup coconut chips (optional)
Instructions:
Preheat oven to 325° Fahrenheit
Combine oats and nut/seed/dried fruit mixture in a large bowl
In a separate bowl, stir together tahini, date syrup, coconut oil, vanilla extract, and cinnamon
Pour the tahini mixture over the oat mixture and stir until combined
Spread the granola out on a baking sheet lined with parchment paper. Bake for 25 mins, stirring once halfway through
Top with coconut chips and cook for 5 more minutes (keep an eye on it to make sure the chips don’t burn)
Remove the tray from the oven. Let the granola cool completely before breaking it up into your desired size of clumps
Enjoy immediately or store at room temperature for up to a month!
